Are You #Vegan This Thanksgiving?

People, yes, Facebook is a time suck. But it's also wonderful in so many ways. Like, I would never have heard of The Jazzy Vegetarian if somebody hadn't commented on somebody else's post about it.

So. Many. Recipes.

I am definitely bookmarking this site so I can take vegan goodies to pitch-ins for my vegetarian and vegan friends. Some of the recipes are also gluten-free. And, even though she calls herself The Jazzy Vegetarian, all her recipes are vegan.

Half a Burrito

So I brought home half a burrito from lunch. I got it at the Circle K, which is one of those gas stations with coffee and snackies and groceries and necessities for people staying in motels and stuff.

Good burrito, actually, but HUGE. Also: no spices whatsoever.

So I brought half of it home, heated it for supper, topped it with chipotle powder, cheese, and cooked onion. Like so:


That's more like it!

Srsly, though, those little convenience stores make some dang good food. The one in downtown Corydon makes a BLT that canNOT be beat. Also: JayC grocery's pot roast. AMAZING.

No, I am not a gourmet.

I'm posting at my own blog today about a thin chicken and dumplings soup I made for my poor, ill husband. Not thick, like I like it, but thin, like he does. Because love.

Best #Vegan Cheese -- Better than Dairy!

Srsly. If I could get this stuff at my local store, I would only use this.


Our #2 Daughter gave me a gift certificate to Rainbow Blossom, so we drove down there and got these. SO GOOD! I genuinely prefer these to dairy cheese. But, alas, our stores don't carry it.

If you have a store that carries Daiya cutting board shreds, take my advice and try them. You can thank me later.

Blast From My Past With A Twist #vegan

It's turned off cold, and chili sounded good. Charlie agreed, so I made some how we do.

While the spaghetti is cooking -- YES, SPAGHETTI! IT ISN'T CHILI UNLESS IT HAS SPAGHETTI IN IT! -- You make the sauce.

Around Here Chili Soup

  • bit of olive oil
  • ground beef (I used Quorn Meatless Crumbles)
  • chili powder
  • cumin powder
  • onion powder
  • garlic powder
  • tomato sauce
  • tomato paste
  • water and Not Beef bouillon
  • can of kidney beans
Put it all together in a pot big enough to hold it (duh) and heat it up. If it's TOO soupy, add some water mixed with cornstarch to thicken it, or mash up the beans.

Now comes the sad part: We were out of spaghetti.

The good part: We had some macaroni.

So we ended up having what my folks called Chili Mac. I don't think they invented that, I'm just sayin'.


Me being me, I always put cheese in my chili, but one of our daughters gave me a gift certificate to Rainbow Blossom and I scored a bag of Daiya shreds, so this was totally vegan!

Charlie doesn't like spicy, so I put very little chili powder in here. At the table, I sprinkled my bowl with Penzys chipotle powder and cleared my sinuses.
