Vegan Cheese That Would Fool You

We eat dairy, but #2 Daughter does not, so I'm always on the lookout for good substitutes. I bought the product I'm highly recommending today for a dish I took to a family holiday pitch-in. I made something with it in advance, since I didn't have much hope for it. My back-up plan was to leave out any form of cheesiness altogether. I didn't have to do that.

The product is Daiya Cheddar style shreds, and I'm tellin' you what: No, it doesn't compare to the best natural organic aged Cheddar, but it's actually better than what you'll find hanging from hooks in the dairy aisle.

Here is a tuna melt. The Daiya will actually melt better than this, but I got impatient and dragged it out so I could nom it up.

My tuna salad is simple: tuna (duh), onion powder, chopped celery, salt, and mayonnaise. I add pepper at the table, because Charlie doesn't like pepper.

I could eat tuna melt until I pop, which I guess would make me a foodie fatality.
