Baileys Cookies and Cream Parfaits

4 oz semi-sweet chocolate roughly chopped

1/2 cup milk

2 cup heavy whipping cream chilled *

Feeding the Soul in Fall Branch, TN

One of the best things about a small town is how the citizens pull together when someone needs help. My town of Fall Branch is extremely small, but folks really turn out for a good cause. This Saturday, two big events will have just about everyone in "The Branch" cooking and/or eating for a good cause. Fall Branch School's Fellowship of Christian Athlete is organizing a spaghetti dinner to raise money for the family of child in the school with special medical needs. They will have steaming plates of spaghetti and some homemade desserts. Meanwhile, the Fall Branch School cheerleaders are doing a pork barbecue supper to raise money for their squad. The cheerleaders will have homemade pulled pork sandwiches, beans, slaw and desserts. Sounds like a fattening, delicious, fun, feel-good Saturday in Fall Branch!

What Price Goose Eggs?

One of my church friends calls me every so often, murmurs a question, and makes an appointment to see me in church. I go, sit in my pew, and she comes up and hands me a bag.

She has geese.

Well, it isn't so much that she has geese as it is that she suffers from geese.

If you've never seen goose eggs, behold them:
They're HA-YOOGE!

What do I do with them? Listen, kids, I'm here to tell the world, goose eggs make the world's best brownies. Yes!

Here's my recipe:

Hershey Kitchens Brownies
  • 1/2 cup margarine
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 eggs or 1 goose egg
  • 1/2 cup flour
  • 1/4 tsp baking powder
  • 1/3 tsp salt
  • 1/3 cup cocoa
  • 1/2 cup chopped nuts
Mix all ingredients well. Butter a square pan and pour in the batter. Bake at 350F for 30 minutes.

Oh, and the price? She said, "Take the geese."

I didn't.

Lazy, Rich Buschetta

I make a bruschetta that is simple, rich and fattening! Step 1: Slice a baguette into small rounds. If you slice the bread on your baking sheet, lots of crumbs wind up scattered about. Leave them! The crumbs become something yummy. Step 2: Melt about 2 Tbsp. of butter. Stir in a bit of minced garlic. Brush onto bread rounds. Step 3: Sprinkle bread rounds with a little mozzarella and Parmesan cheese. Note: Let some of the garlic butter and cheese fall all over the bread crumbs! Step 4: Toast bread rounds in 250 degree oven for 5 minutes. Step 5: As bread toasts, chop a tomato and pour about 1/3 cup of your favorite Italian salad dressing over chopped tomatoes. Step 5: Remove bread rounds from oven. Place rounds on plate. Scrape up bread crumbs and spoon over bread rounds. Step 6: Spoon tomatoes on top and indulge!

Spinach Salad Wif Crunchy Bits In

I love salads with crunchy bits -- always assuming that the crunchy bits are supposed to be there.

So I made this:

That's spinach leaves, matchsticked mini cucumbers, and chunks of Cara Cara oranges. The topping is (are?) slivered almonds and crunched-up ramen noodles pan-toasted in olive oil.

An easy, delicious, probably healthy, and satisfying salad.

Salmon Paprika

Yeah, this one isn't vegetarian, it's pescatarian. That means it's fish, in case you don't know.

So I had this frozen salmon. I drizzled it with lime juice, salt, and smoked paprika. I seeded and halved some little sweet peppers and rubbed them with oil and salt. Put the frozen salmon and peppers on a baking sheet in the toaster oven and baked them at 400F for 25 minutes (according to directions). I think that was a little long, because the salmon was chewy, and I like it tender.

On the side, we had baby Lima beans and noodles with parsley.

Most satisfying. Tomorrow, on Marian Allen, Author Lady, I'll tell you what I made with the leftover salmon, since we each only ate half of ours.

Softball Party

Talk about a time-saver! Both of my girls chose the same theme for their March birthday parties. Tis the season to play softball, and since both of mine do; softball is on their minds come Springtime. Decor and snacks could not have been simpler. I used a red permanent market to make "laces"on yellow balloons and plates. A big glass hurricane filled with softballs became a centerpiece. A softball glove held bubblegum and a jar was full of sunflower seeds (2 popular dugout snacks). I did a fruit tray shaped like a softball diamond with a strawberry pitcher's mound and small cups of dip for bases. Unlike the one pictured, I placed paper softballs around the tray. My oldest daughter used more paper softballs and some twine to make a garland. My youngest wanted a piƱata; so I bought one shaped like a star and glued a large paper softball to the middle. For dessert, we got cookie cakes with a flaming softball! The parties were fun, inexpensive, cute and easy.

Pasta Fazool #Vegetarian

Pasta Fazool is American for Pasta e Fagioli, or pasta with beans. Although pasta fazool usually has tomatoes and broth, this doesn't. Because I didn't have any tomatoes, and I didn't want it soupy, that's why.





This Pasta Fazool:

  • olive oil
  • minced garlic
  • leftover cooked spaghetti
  • cannellini beans
  • fresh spinach, chopped
  • herbs (basil, parsley)
  • Italian cheeses

Cook the minced garlic in the bit of olive oil until the garlic is tender. Add the spaghetti and a little water. Add the drained beans, spinach, and herbs and cook until the beans are hot and the spinach starts to wilt. Season to taste. Put it on a plate and top it with cheese.

A Cake That's Better Than What?


Chances are you've had a cake that people claimed was “Better Than Sex” cake. What makes it so special? What's the method and how can you shake it up?

All you need to make a Better Than Sex cake is to bake a sheet cake, poke holes in it, cover it with a thick sauce, and then top with whipped cream and toppings.

One popular version uses chocolate cake covered in sweetened condensed milk, whipped topping, chopped Heath Bars, chocolate sauce, and caramel sauce. However, you can do this in so many different ways.

For example, bake an orange cake, cover in sweetened condensed milk, whipped cream, orange sauce, and white chocolate chips. Just have fun with it and share your ideas below.
