Pasta Fazool #Vegetarian

Pasta Fazool is American for Pasta e Fagioli, or pasta with beans. Although pasta fazool usually has tomatoes and broth, this doesn't. Because I didn't have any tomatoes, and I didn't want it soupy, that's why.





This Pasta Fazool:

  • olive oil
  • minced garlic
  • leftover cooked spaghetti
  • cannellini beans
  • fresh spinach, chopped
  • herbs (basil, parsley)
  • Italian cheeses

Cook the minced garlic in the bit of olive oil until the garlic is tender. Add the spaghetti and a little water. Add the drained beans, spinach, and herbs and cook until the beans are hot and the spinach starts to wilt. Season to taste. Put it on a plate and top it with cheese.
