Veg Teriyaki #Vegan

So this happened.
And BOY, was it good!

Veg Teriyaki

  • olive oil
  • minced garlic
  • chopped onion
  • veg (I used cauliflower and kale, including kale stems, mushrooms, celery)
  • cashews
  • soy sauce
  • brown sugar (just a little)
Heat the oil. Toast the garlic and onion a minute or two, then add the rest of the veg. Cook, stirring often, until the veg are crisp-tender and beginning to brown. Add cashews, soy sauce, and brown sugar.

Oh, boy, oh, boy!

I would have added red peppers and microwaved (1 minute) sliced carrots to the oil-cooked mix. For taste AND color....
