Potato Soup #Vegetarian

What do you eat on St. Patrick's Day when your husband is a vegetarian? Not corned beef and cabbage, that's for dang sure.

No, we have potato soup!





Take some potatoes, peel them, cube them, and cook them in salted water on a low boil or high simmer for about 20 minutes. Mash them a little. Add butter (or, in our case, vegan margarine), milk, and chopped parsley and heat it through.

I like my soup thick and Charlie likes his thin, so I added some instant potato flakes (!!) to mine.

SO good!
